You’ve officially made it through the first week of 2021 and that calls for doughnuts! Over here at WanderEater, we’re major doughnut connoisseur so trust us when we say we know a good one from a bad one (but honestly, are there ever bad doughnuts?) This doughnut recipe, courtesy of SodaStream uses sparkling water to achieve a light and fluffy batter that’ll be anything but dense. These pillowy cake-like bundles of joy will melt in your mouth and all you’ll be left with are the dishes — sorry, we wish we could take care of those for you!

Yield: About 12-18 doughnuts
Ingredients:
- 1/2 cup of SodaStream Sparkling Water
- 1 1/4 cup flour
- 2 tsp baking powder
- 1/4 cup brown sugar
- 2 tbsp extra virgin olive oil
- Pinch of salt
- 1 tsp vanilla bean paste or extract
- light olive oil, to fry in
- icing sugar and cinnamon, to dust and serve

Method:
- Fizz cold fresh water with SodaStream Sparkling Water Maker
- Combine SodaStream sparkling water, flour, baking powder, sugar olive oil, salt and vanilla in a bowl with a metal spoon
- Heat a few inches of oil in a saucepan on medium and test a little dough to see if it’s hot enough
- Once the test piece of dough begins to bubble quickly, drop a tablespoon of dough at a time into the oil. You can fry 2-3 doughnuts at a time
- They will puff up and turn golden brown when ready
- Drain on paper towel and repeat with remaining dough
- Dust with icing sugar and serve while hot
