It may be the most wonderful time of the year but this year specifically has definitely thrown us some curveballs and a stiff cocktail (or three!) are definitely in order. Our resident cocktail guru Monica Carbonell has graciously shared some of her top cocktail recipes that are sure to get you through the holiday season with a smile on your face. We’ll cheers to that!
Here are 3 Cocktails that’ll get you through the Festive Season!
Peruvian Christmas

Ingredients:
- 2 oz Pisco
- 1/4 oz Amaro Montenegro
- 1/4 oz Port wine
- 1 oz cranberry juice (not that fake stuff!)
- 1/2 oz chai tea syrup
Method:
- Place your coupe in the freezer while you start to build your cocktail.
- In a shaker, combine all the ingredients and ice and give this a vigorous shake.
- Double strain into a chilled coupe. Optional lemon peel garnish.
Gingerbread and Pecan Old Fashioned

Ingredients:
- 3/4 oz gingerbread syrup
- 2 oz pecan-infused bourbon
- 1 orange zest, optional
- 2 dashes Angostura Bitters
Instructions:
- In a mixing jar, combine the syrup and bourbon. Fill the jar 3/4 of the way with ice and stir until well chilled (30 seconds minimum)
- Strain over 1 large ice cube and garnish with orange zest
Gingerbread Syrup:
Ingredients:
- ½ tbsp fresh ginger approx. 1 inch
- 1½ cups brown sugar
- 1 cup water
- 1 cinnamon stick
- 3 cloves
- 1/4 tsp fresh nutmeg grated
Method:
- In a saucer, combine all the ingredients and bring to a boil
- Allow this to simmer for 5 minutes
- Strain through a fine-mesh strainer and let it cool to room temperature before refrigerating
- This Syrup can last for 2 weeks
Pecan-Infused Bourbon
Ingredients:
- 1 cup bourbon, something preferably on the sweeter end
- 3/4 cup pecans
- 1 cinnamon stick
- 1/4 tsp nutmeg, freshly grated
- 1/2 orange zest
- 1 tbsp El Dorado 12 yr Rum
Instructions:
- Preheat oven to 350 degrees F. Rinse Pecans with the tablespoon of El Dorado Rum (Anything sweet and heavily spiced can work here)
- Line a baking tray with parchment paper and place rinsed pecans on top. Throw into your oven for 20 minutes.
- In a sterile jar, place toasted pecans, half of the entire orange peel, cinnamon stick and nutmeg. Pour Bourbon over top and seal. Stir once a day. Keep away from light and heat for 5 days before straining.

Ingredients:
- 3 cardamom pods, toasted then crushed with mortar and pestle
- 1.5 oz Prairie Organic Vodka
- 2 oz Oolong tea mix
- 1/2 cup chilled heavy cream
- 1 orange, zested
Method:
- Add hot water to your tempered glass or mug.
- In a whipped cream shaker, add cardamom and cream. Give this a vigorous shake (at least 30 seconds), until the cream is firm enough not to drip off the side of your hand. Set aside in the fridge while you make the drink.
- Empty out our glass and add your vodka, Oolong Tea Mix and top with cream. Lightly zest a touch of orange on top of the cream.
Notes:
To make the Oolong Tea Mix, simply combine 1/2 cup water, 1/2 cup whole milk with 1 oolong tea bag. Add 1 large tbsp of honey and let this some to a simmer on the stove for 2 minutes. Remove from heat and use!
Here are some of Monica’s Pro Tips!
- When picking up your grocery list for your holiday dinner, make sure you have extra herbs for your cocktails. YES the herbs. They go a long way. So if rosemary is a star ingredient, add it to your bubbly. Plus you can smoke the rosemary slightly and have it infuse in your glass quickly to dress it up.
- Plan ahead with ice! The night before, add a few cranberries and rosemary. It won’t do much for taste, but it’s going to look FAB in your glass.
- Cooking with wine and got some leftovers? You can easily throw together a mulled wine recipe, just make sure you have the spices (which you should have if you’re cooking this year, just beware and use whole spices, not ground, plus some citrus for batch.
- I highly recommend having a few seasonal fruits and citrus around when you shop. Whether that’s blood orange, cranberry or pomegranate. These winter flavours can go a long way in your classic creations.
- When all else fails, get dressed up, stir up your favourite cocktail and tie a ribbon on it. The ‘gram will love it.
