As she would put it, IYKYK, Chantelle Leonardo-Fernandes’ (also known as @chantidez on social, and the wife of Canadian pop star, Shawn Desman) chocolate chip cookie dough cheese squares (bars) are quite the rage. Not only do they leave us all drooling when she posts them on her stories. Chantelle often shares the recipes in her stories, saying that she received countless requests, so I thought to reach out and share it with all of you. After all, she says it’s quick, easy to make, and her number one requested dish for gatherings. Which all sounds like check, check, check, to me.

Here’s the quick 6 step recipe for Chantelle Fernandes’ super easy addictive chocolate chip cheesecake bars:
Prep time
5-6 minutes
Bake time
40 minutes
Makes
1 dozen (depending on the size you cut them)
Our team HAD to try making them immediately after seeing them on her stories and can attest that they’re incredibly delicious.
Ingredients
- 2x 100g, Pillsbury Cookie Dough, Ready to bake packages, or alternatively 2 cups of your favourite cookie dough.
- 2x 250g Philadelphia Original Brick Cream Cream Cheese, or similar (the No Name alternative is great if you want less of that prominent cream cheese flavour).
- 3x, Large eggs.
- 1/4 cup, Granulated white sugar.
- Some butter sparingly, for the pan, or cooking spray.
Tools needed
- 2, Mixing bowls.
- 1, Baking tray, we love the Le Creuset Rectangular Stoneware dish, but not required.
- 1, Whisk or can use the electric stand mixer on low.
Instructions
- Separate the egg whites from the yolk, and beat the egg whites with the sugar until thick. Beat the egg yolk with the cheese in a separate bowl. Then mix both the egg white and egg yolk mixtures together.
- Butter your baking tray either with a stick of butter or the spray can.
- Lay down first base layer of cookie dough (1st bar), and ensure you completely cover the base of the pan, leaving no holes.
- Then pour over the cream cheese mixture, evening it out for best coverage.
- Then lastly, slice the cookie rounds (so easier laying on top of mixture) and place them evenly across the top. Try to leave no pockets for a nice even top, but you’re welcome to make it your own.
- Bake in the oven for 40 minutes at 350 degrees, until golden brown.
Once done, pull it out and let them rest. Once cooled you can use a knife to slice into squares and enjoy!
When you make them, don’t forget to tag @chantidez and @wandereatermag in your photos. Enjoy!
