Caribbean Rum Punch
YIELD: Serves 4 – 6
INGREDIENTS:
- 1 cup of orange juice
- 1 cup of pineapple juice
- 1/4 cup lime juice
- 1/4 cup rum
- 1/4 cup dark rum
- 1/2 cup of grenadine
INSTRUCTIONS
- In a pitcher, combine the juices, the rum, and the grenadine. Stir. Pour into ice-filled glasses and serve with an orange slice and maraschino cherries.
Lemonade Rum Punch
YIELD: Serves 1
INGREDIENTS:
- 4 oz Lemonade
- 2 oz Pineapple Juice
- 2 oz Coconut Rum
- 1 oz Dark Rum
INSTRUCTIONS
- Pour lemonade, pineapple juice and coconut rum into large glass filled with ice, using a spoon to gently stir the drink. (Or pour into a cocktail shaker, shake and pour into a glass filled with ice.)
- Top glass with the dark rum, so it floats on top and slowly blends into the rest of the drink, giving it an ombré effect.
- Serve.
Classic Daiquiri
YIELD: Serves 1
IINGREDIENTS:
- 1 ½ ounces (3 tablespoons) best quality light or white rum
- 1 ounce (2 tablespoons) lime juice
- ½ ounce (1 tablespoon) simple syrups or maple syrup
- Lime slice, for garnish
INSTRUCTIONS
- Add the rum, lime juice, and syrup to a cocktail shaker. Fill it with ice and shake until cold.
- Strain into a cocktail glass. Serve garnished with a lime slice.
Grapefruit Mojitos
YIELD: Serves 2
INGREDIENTS:
- Juice 3 pink grapefruits , plus 1 thinly sliced
- Small pack mint
- 140g golden caster sugar
- 250ml white rum
- 1l soda water
INSTRUCTIONS:
- Put the grapefruit juice, most of the mint and the sugar in a large jug.
- Crush the ingredients together with the end of a rolling pin to release the flavour from the mint and dissolve the sugar.
- Add the rum, mix well and top up with soda water and ice.
- Add the sliced grapefruit and remaining mint before serving.
YIELD: Serves 2
INGREDIENTS:
- 2 ounces light rum
- 2 ounces dark rum
- 1 ounce lime juice, freshly squeezed
- 1 ounce orange juice, freshly squeezed
- 1/2 ounce passion fruit puree
- 1/2 ounce simple syrup
- 1 teaspoon grenadine
- Garnish: orange half-wheel
- Garnish: preserved cherry
INSTRUCTIONS:
- Add the light and dark rums, lime and orange juices, passion fruit puree, simple syrup and grenadine into a shaker with ice and shake until well-chilled.
- Strain into a large Hurricane glass over fresh ice.
- Garnish with an orange half-wheel and a preserved cherry.
