If you’re plant-based or dairy-free, you know as well as anyone that it’s incredibly challenging to find a cheese that gets melty and oozy. That is until now because Violife Foods is now available and the brand’s lineup of cheeses is unlike anything you’ve ever had before. Say goodbye to rubbery vegan cheeses that taste ‘blah’ and hello to a flavourful and satisfying grilled cheese. However, this isn’t just any grilled cheese recipe. This one has a delicious smoked flavour as well as thyme, and roasted apples. This recipe comes straight from Chef Matthew Ravenscroft who’s vegan himself. All in all, if this recipe is good enough for him, then it’s good enough for us!

Here’s how to make a delicious plant-based grilled cheese recipe!
Serves: 2
Ingredients:
1 loaf of bread (or slices of thick-cut bread, to save on cutting it!)
4 slices of Violife smoke flavoured provolone-style slices
4 slices of Violife mature cheddar-style slices
4 McIntosh apples (or a similar type of apple—crispy, and not mealy)
3 stems of thyme
black pepper
cooking oil, or plant-based butter or margarine
Method:
- Pre-heat oven to 425°F (220°C)
- Place apples on an oven-safe roasting tray, and place in preheated oven for
10-15 minutes. Remove from oven once skin is bursting and they are golden
and aromatic. (Keep oven on at same temperature.) - Lightly oil or spread your plant-based butter on two slices of bread and place buttered side down on the cutting board.
- Remove skins of apples, and spoon roasted flesh into a small mixing bowl. Combine with black pepper and picked thyme. Mix with a fork until fully
incorporated to make the spread. - Add a generous spoonful of the roasted apple spread on each side of bread and add one of each of the Violife smoke-flavoured provolone-style and mature
cheddar-style slices, and close the sandwich. - Place in a skillet on medium heat with a bit of extra plant-based butter.
- Repeat with the second sandwich.
- To get the grilled cheese sandwich to extra gooey-ooey status, place it in the oven
for 4 minutes on oven-safe baking sheet. - Cut in half and enjoy! (Are you a triangle person, a square person, or an eating-it-whole kind of human? That’s up to you!)
