You know, just because we’re staying home as much as possible that doesn’t mean our meals have to be basic and boring. In fact, they should be the exact opposite. That’s why we’re so excited to share this super flavourful pork belly Bahn mi recipe, courtest of GoodLeaf Farms. And don’t worry if you can’t get your hands on pork belly. You can use any type of meat that’s in your fridge or even a few slices of cold-cuts will work in a pinch. It won’t be as traditional but it’ll be just as delish!
Serves: 2
Ingredients:
- 1/2 package of GoodLeaf Farms Asian Blend
- 4 slices of pork belly
- 2 tbsp mayo
- 1 tbsp Sriracha
- 1 carrot, sliced into matchsticks
- 1/2 of a cucumber, sliced into matchsticks
- 4 radishes, thinly sliced
- 1 jalapeno, thinly sliced
- 2 hoagie-style buns
|Method:
- Heat a large skillet over medium heat until hot. Add pork belly and cook 2-3 minutes per side until golden, crispy and cooked through. Remove from pan and place on paper towel to drain.
- In a small bowl, combine mayonnaise and sriracha, set aside. Slice hoagie buns down the centre, lengthwise.
- Spread sauce on both buns then divide greens, pork belly, sauce, and toppings equally amongst both sandwiches and enjoy!
