While we might have to wait a little bit before we can actually go inside certain places, rest assured that you don’t have to go without a delicious cocktail. The Fairmont Royal York, one of Toronto’s pride and joys, features CLOCKWORK Champagne & Cocktails that boasts some of the most delicious cocktails and tasty bites in the city. CLOCKWORK’s Director of Mixology Rus Yessenov has graciously shared with us the recipe for the Lost & Found cocktail that consists of rye, tequila, and sweet clementine juice. For the best results, Rus says to freshly press the clementine yourself and to use a high-quality apricot liqueur. A pro tip straight from Rus is to keep your coupe glass in the freezer before serving to achieve the best serving temperature.

Here’s how to make the Royal York Hotel’s Lost & Found cocktail recipe!
Serves: 1
Ingredients:
- 0.75oz Rittenhouse Rye
- 0.75oz Casamigos Mezcal
- 0.75oz Giffard Apricot Liqueur
- 1oz Clementine Juice
- 0.5oz Simple Syrup
Method:
- Combine all ingredients in a shaker
- Add ice, and shake vigorously
- Double strain into a chilled coupe glass.
- Garnish with grapefruit peel after expressing oils from the peel.
