In case you didn’t already hear the news, today is National Bagel Day and yes, you need to celebrate. Bagels are arguably the best ever because they’re doughy and delicious but also because they’re a blank canvas meaning you can build yours with whatever you have in your fridge or pantry. Bagels can go sweet or savoury so the choice of toppings is really up to you and whatever you’re craving at the moment. Seeing as it’s January and over here at WanderEater, we’re still trying to hold on tight to our New Year’s Resolutions, we’re keeping it lighter this time around. However, if you’re wanting to go big with a classic bagel & cream cheese, you have our full permission to enjoy!
This recipe, courtesy of Dempster’s uses their bagels to create crunchy bagel crisps that are perfect for scooping up dip as a tasty afternoon snack. Here’s how to make them!
Serves: 2
Ingredients:
- 2 Dempster’s® Everything Bagels, halved
- 2 tbsp (30 mL) olive oil
- 1/2 cup (125 mL) cream cheese, softened
- 1/4 cup (60 mL) plain Greek yogurt
- 1 tbsp (15 mL) lemon juice
- 1 tsp (5 mL) honey
- 1/4 tsp (1 mL) each salt and freshly ground pepper
- 1/4 cup (60 mL) finely crumbled feta cheese
- 2 tbsp (30 mL) finely chopped fresh parsley
Method:
- Using a rolling pin, roll bagel halves to flatten. Slice each half into quarters to make 16 pieces.
- Preheat oven to 350°F (180°C). Toss bagel pieces with olive oil. Arrange in a single layer on a parchment paper-lined baking sheet. Bake for about 20 minutes or until crisp and golden.
- Meanwhile, stir together cream cheese, yogurt, lemon juice, honey, salt and pepper until smooth. Stir in feta and parsley.
- Serve toasted bagel crisps with dip and enjoy!
Tip: Feel free to serve these bagel chips with your favourite store-bought dips as well like hummus, tzatziki, salsa, guacamole, and even spinach and artichoke dip. Plus you can also use low-fat cream cheese and low-fat yogurt if desired.
