Wild Mushroom Tacos
Recipe:
INGREDIENTS
- 750g assorted wild mushrooms, torn or sliced
- 3 Tbsp Extra Virgin Olive Oil, divided
- 1 Tbsp Taco Seasoning
- 1 cup diced white Spanish onion
- 2-4 Tbsp minced Jalapeño chili
- 2 cups diced Roma tomato
- Salt to taste
- 3 Tbsp chopped cilantro
- 12 Corn Tortillas
- ½ cup Feta Cheese or Vegan Feta Cheese, crumbled
- Roasted Chipotle Salsa
- Lime wedges for serving
METHOD
- Heat a large frying pan over medium high heat.
- Add mushrooms to dry pan and cook until all the liquid evaporates and they start to brown, 7-10 minutes.
- Add 2 Tbsp olive oil and taco seasoning and continue to cook until mushrooms are a bit crispy, 3-4 minutes longer.
- In a second large frying pan, heat remaining 1 Tbsp olive oil and cook onion and Jalapeños until translucent, 3-5 minutes.
- Add tomatoes and cook until they break down and become saucy, 3-4 minutes.
- Add browned mushrooms to tomato mixture and stir to combine.
- Season to taste with salt and add cilantro.
- Warm up tortillas and mound mushrooms on them.
- Top with feta cheese and serve with salsa and lime wedges.
Mexican Style Corn Ribs
Recipe:
INGREDIENTS
- 3 ears shucked corn
- 1 Tbsp Taco Seasoning
- 4 Tbsp Extra Virgin Olive Oil
- 4 Tbsp Mayonnaise
- 1-2 tsp chili powder or paprika
- ½ cup crumbled Feta Cheese
- 1/2 cup Chipotle Mayonnaise
- 1 lime, cut into wedges
METHOD
- Using a large heavy knife, carefully cut corn lengthwise in half, then cut the halves into quarters.
- In small bowl combine taco seasoning, olive oil and mayonnaise.
- Brush corn ribs generously on all sides with the seasoned mayo.
- Place in one layer in air fryer basket, and bake at 375°F, shaking basket half way during the cooking process, for 10-15 minutes, until corn is tender, crispy and ribs are curled.
- Sprinkle ribs with chili powder and feta cheese.
- Serve with chipotle mayo and lime wedges.
