Whenever you’re doing any cooking or grilling, a great marinade is never a bad thing to use to up the ante on whatever you’re making. Especially with our summer grills heating up, marinating your meats, fish, or even tofu overnight give it a real kick of flavour, helps tenderize, and just makes it taste better. All it takes is a little organizing and with just a few flicks of the wrist you can have a great marinade in no time flat.
For each marinade recipe, simply add all ingredients into a resealable plastic bag and add your protein of choice. Marinade for at least 1 hour or up to overnight.

Provençal Herb Marinade
Ingredients:
- 1 tsp salt
- 1/4 cup fresh lemon juice
- 3/4 cup olive oil
- 2 tbsp Herbs de Provence
- freshly ground black pepper, to taste

Tandoori Marinade
Ingredients:
- 1 1/2 cups plain yogurt
- 2 garlic cloves, finely chopped or grated
- 1/2 yellow onion, finely chopped or grated
- 1 tsp ginger, grated
- 2 tsp garam masala
- 1 tsp cayenne pepper, optional
- 1 tsp paprika
- salt
- pepper
Easy Mexican Marinade
Ingredients:
- 1/4 cup olive oil
- 1/4 cup orange juice
- juice of 2 limes
- 1-2 chipotles in adobe + 1 tsp sauce
- 1/2 tsp cumin
- 1 tbsp soy sauce
- 2 cloves of garlic, finely chopped or grated
- salt & pepper
Jamaican Jerk Marinade
Ingredients:
- 3 scallions
- 1-2 scotch bonnet chilies, remove seeds if you want less heat
- 2 garlic cloves
- 1 tbsp ground allspice
- 1 tsp ground nutmeg
- 1/4 cup soy sauce
- 1 tsp dried thyme
- 3 tbsp malt vinegar
- 3 tbsp Jamaican rum
- 1 tbsp honey
- salt & pepper
Greek-Style Souvlaki Marinade
Ingredients:
- 1 cup Greek yogurt
- 4 garlic cloves, minced
- juice of 1 lemon
- 2 tbsp dried Greek oregano
- salt & pepper
