Here’s how to make this delicious Southwest Broccoli Burrito recipe!
Serves: 4
Ingredients:
- 1 package Wholly Veggie Southwest Broccoli Veggie-Full Meal
- 1 ½ cups cooked quinoa
- 4 large tortillas
- Hot sauce
- Guacamole
- Lime wedges
Method:
- Preheat skillet to medium-high heat, once hot add the Veggie-Full Meal contents to
the pan - Add cold water to the pan and stir occasionally for 7 to 9 minutes, or until the sauce
has thickened - Once Veggie-Full meal is cooked, remove contents from heat and place into a large
bowl - Add cooked quinoa and mix to combine
- Preheat non-stick pan or heated press to medium heat
- While the pan/press is heating, divide the mixture onto four tortillas
- Wrap burritos tightly making sure seams are tucked in
- Place burritos seam side down in pan/press and cook and until tortillas are golden,
approximately 4 minutes - Remove from heat and cut burritos in half
- Serve warm with hot sauce, guacamole and lime wedges
- Enjoy!
