Skyr is a very common Icelandic yogurt but it’s also healthy and full of protein. A yogurt-like dairy product, skyr has been a staple in the Icelandic diet for over 1,000 years. While Icelanders categorize skyr as a cheese, it can be found in a variety of ways on menus throughout the country, from breakfast to this dessert. This recipe is courtesy of Restaurant Ranga, Hotel Rangá’s restaurant that boasts stunning views of the East Ranga river, volcanoes, and sometimes if you’re lucky, the Northern Lights.
Serves: 4
Ingredients:
- 1 lb plain skyr yogurt
- 1 ¾ oz icing sugar
- ⅔ cup heavy cream
- ½ cup oats
- 2 tbsp honey
- Blueberry coulis, recipe follows
- Handful of raspberries and blueberries
Method:
- Preheat your oven to 200°F
- Place the skyr, icing sugar, and heavy cream in a bowl and whip together until the skyr becomes light and fluffy, set aside.
- Toss the oats with honey and bake until the oats turn a beautiful golden brown.
- Place the whipped skyr in a glass bowl, drizzle the blueberry coulis on top. Sprinkle with oats, and garnish with blueberries and raspberries.
Ingredients for blueberry coulis:
- 17 oz blueberries
- 3 ½ oz sugar
- 3 ½ oz water
Method:
- Place all of the ingredients in a small saucepan. Bring to a gentle simmer over medium-low heat, simmer for 10 min, set aside and let cool. After it cools, pour it into a blender for a smoother consistency, if preferred.
